SEJARAH DAN KEBAIKAN KIMCHI

Kimchi merupakan makanan tradisional yang berasal dari Korea Selatan. Pembuatan Kimchi dilakukan sebelum masuknya musim sejuk iaitu sekitar awal bulan November sehingga pertengahan bulan Disember. Pada zaman dahulu, orang di Korea menggunakan garam sebagai bahan pengawet ketika musim sejuk untuk memastikan Kimchi tahan lebih lama.

KIMCHI

Cara pembuatan Kimchi adalah dibuat daripada hasil proses penapaian sayuran segar termasuk sawi, lobak putih dan timun yang dicampur dengan bawang, garam, cili, cuka, minyak jagung dan halia sekaligus  memberikan rasa masin dan pedas. Oleh itu, mereka menginovasikan Kimchi ini dengan pelengkap makanan lain seperti sup kimchi, nasi goreng kimchi dan lain-lain.

Terdapat pelbagai jenis Kimchi, antaranya adalah Baechu Kimchi (sawi putih), Kkadugi Kimchi (lobak), Gat Kimchi (sawi hijau), Oisobagi Kimchi (timun), dan Buchu Kimchi (daun bawang putih).

Makanan ini bukan sahaja menyelerakan tetapi juga mempunyai banyak faedah kesihatan. Salah satu bahan utama dalam pembuatan kimchi adalah kobis cina yang padat dengan nutrisi baik seperti Vitamin A dan C, sekurang-kurangnya 10 jenis mineral dan lebih 34 amino asid. Selain itu, kimchi melalui proses penapaian lakto yang mengandungi probiotik. Proses penapaian ini dapat menawarkan kesihatan yang banyak apabila dimakan dalam jumlah yang besar.

Di samping itu, kimchi dapat melancarkan pencernaan. Mengambil kimchi secara rutin boleh mengembalikan keseimbangan mikro dalam usus yang sekaligus membantu sistem perncernaan berfungsi dengan lebih baik. Seterusnya, Kimchi kaya dengan Vitamin C yang merupakan antioksidan dalam melindungi sel-sel tubuh seseorang daripada sebarang kerosakan. Vitamin ini dapat membantu dalam penghasilan protein termasuk kolagen bagi memberi kesan kulit yang cantik dan sihat.

Akhir sekali, kimchi dimakan setiap hari oleh orang Korea, sehingga lebih 20-kilogram setahun setiap orang, dan apabila orang Korea bergambar atau berselfie, mereka menyebut “Kimcheeee!” dan bukan “Cheese!” seperti di barat.

#Fun Fact Local Halal Korean KFood : Kimchi

Kimchi is a traditional Korean Food.

Since it is a fermented food, which makes it an excellent probiotic. The same lactobacilli bacteria found in yogurt and other fermented dairy products are also found in kimchi. Consuming the so-called “good bacteria” in kimchi can help you maintain a healthy digestion.

Cooking kimchi can kill its probiotics if the kimchi reaches a temperature of 115°F or over. Remember, kimchi is safe to eat as is and doesn’t have to be cooked.

If you do want to heat it up, use a low temperature and don’t heat it for too long. If you really want to get probiotics benefits from dishes like kimchi soup or kimchi fried rice, throw in the kimchi at the end. Or, you can divide the amount of kimchi you need for the dish in half, and throw in the second half at the end.

Is kimchi halal? Yes, as long it don’t have alcolhol,  we can eat it as one of local halal kfood. Just beware as kimchi sold at the mall may contain spirit which it make non-halal.

If you follow the method of storing kimchi correctly, InshaAllah, it can last 6-12 months in a refrigerator .Some people ask, if you can’t swallow kimchi like that, how come? We suggest you make kimchi ‘stew’. Insha Allah hit the throat. Our favorite is tuna, but you can put meat/chicken. The sour, spicy, salty, sweet taste can really add to the taste. If you know asam laksa, some of people, did add kimchi into asam laksa and it works nicely.

In conclusion, even we are Malaysian , we can eat kimchi as Korean Traditional food. A lot of local halal kfood can be found now at store online or at mall. We don’t need to go South Korea to just taste korean food. Instead, buy if from locals or simply do it yourself.

This year Chinese New Year celebrated last Friday, February 12th, 2021. Mostly, the Chinese New Year festival period lasts for 16 days, starting from Chinese New Year’s eve to the Lantern Festival. So, its already begun since February 11th and will go on till February 26th. Although it almost reach to end of the celebration, I will take this opportunity to wish everyone a Happy Chinese New Year.May your family and friends enjoy luck & blessings all year around while stay safe where ever your are in this pandemic season.

AK’s Kitchen would also like to introduce our new product in line with Chinese celebration. This time, the product will present more on Chinese cuisine instead of Korean. Those are the chili oil, a condiment made from vegetable oil that has been infused with chili peppers. Different types of oil and hot peppers are used, and other components may also be included. It is commonly used in Chinese cuisine, East and Southeast Asia and elsewhere.

The chili oil comes with 3 different types which is Cantonese , Schezuan and Garlic. We also created dish to match with this chili oil, a chicken dumpling! We have the frozen one as well a ready cook that available at Foodpanda or at our kitchen. We hope with the combination of those two can enhance your food taste and satisfy your craving needs.

Cantonese Chili Oil

Made of  palm oil, dried shrimp, shallots and both chili flakes & fresh chili! A savory chili oil with medium spicy level.

Schezuan Chili Oil

Made of  palm oil, schezuan peppercorn, chili flakes and spices such as cinnamon stick, bay leaves, star anise and cardamom pods.

Garlic Chili Oil

Made of  palm oil, fresh garlics, fresh chili and chili flakes. Spicy chili oil with minced garlics.

Frozen Dumpling

Dumpling pack with meat. Filling 100% chicken meat with spring onions. No starch or flour added.
